Well, finally finished the front suspension and had a brief road test. Unfortunately, the gauge doesn't budge so I suspect I fractured the tube somewhere along the process of removing it and replacing the union. Who's been down this road and can advise on what I'm in for? Not really ready for a dash out job but suspect that is where I'm headed. Any tips or guidance for repair or replacement?

Confirm it can make a reading by boiling up a pan of water alongside the car, with the bulb inserted, prior to contemplating gauge removal.

Thanks Richard. It failed the boil test, so on to plan b. It turns out that Holden carries a nice replica with the correct scale and matching font to the Smiths unit in my S4, so I ordered one thinking it would be good to have a proper back-up and with plans to have the original redone with other gauges when I get around to a more complete renovation.
Shipping was unbelievably quick so got it installed today, but will be next weekend or so before I have time to give it a field test.

It's better to leave the brass adapter in the Head, put a Spanner to stop it rotating and unscrew the outer Nut.
The Temp bulb should slide into Adapter so you do not twist the Capillary Temp Tube. If you unscrew the Adapter in the Head without removing the Temp Bulb first you will twist and damage the Capillary Tube.
