Silly question but could someone tell me which way up the head gaskets
should go please? Is it copper coloured side up or down?

Nik,
There is a little oval hole in one corner of the gasket, which makes that corner unique. It must line up with the oil pressure feed to the head holes in the front of the block and head. If you meet that criteria, there is only one way it will work.
