Any benefit for tuning individual carbs?
Of course there is barely enough space for one in each 2:1 collector.
Hypothetically, is it worth the effort?

The 2 to 1 section of the exhaust does not match the carbs as each one sees half of both carbs flows. i.e. one sees cylinders 1 and 4 and one sees cylinders 2 and 3 while the carbs ( I am assuming Strombergs here) feed 1/2 and 3/4. So not worth the effort as it tells no more that a single one in the tail pipe.

I don’t think so. Just take further downsteam after everything together. Then match carbs.
Also, some O2 sensors (maybe all?) do not like being too close to valves (overheating). But I assume a heated Wideband, so downstream further will heat up and start working pretty quickly.

Hypothetically, you could fit individual exhaust gas temperature sensors , I did in my Moggie, a five position switch on the dash allowed me to see the individual exhaust gas temperatures ( HHHH ) ...

For me the idea of 02 sendor is good as i fitted one to my TVR 3000S . A little way back from exhaust valves maybe 30 t0 40 cms.
Imho it's no good sticking a sensor up the rear of exhaust which then suffers from backflow. Not an accurate reading like on rolling roads. You can also log to laptop in realtime driving conditions.

Great video and car. Love it. I'm in the middle of a Zetec conversion on my +2, but Im using an aftermarket plenum, with standard throttle body and ECU. Well done you!
People turn their noses up at the Zetec, but IMHO it spiritual successor to the Twin Cam and BDA engines.

Zetec+ 2 under const, also 130S. And another 130S for complete restoration. Previously Racing green +2s with green tints. Yellow +2 and a couple of others, all missed. Great to be back 04/11/2021 although its all starting to get a bit out of control.
